Saturday Lunch

A bowl full of deliciousness.

It was 12:30, I probably should have had lunch done by this point when the phone rang. It was my lovely husband. 😉 He wanted to know if lunch was done…well, I just broke up a fight in the living room and the baby is running a fever and refuses to be put down, so, no. Lunch is NOT done. The understanding gentlemen on the other end says, “You sound crabby.”

Nailed it.

So, the fighters decided to go play in the snow, THANK You Jesus!! And my better half walked in the door. So, now I had both hands to cook with!! I can get a lot done, fast, if no one is bugging me!!

I pin a lot of recipes from Pinterest, but there is something about reading a cookbook that gets me every time. ❤️

My husband was watching me throw all sorts of ingredients in the pot, and he questioned if this was something he was going to like! I said, I can always make you chicken strips. 😘

This soup really didn’t take long to make, once I had two hands!! And before I  knew it, I was setting it in front of my skeptical husband. I gave him some pepper jack cheese for sprinkling, and some tortilla chips. He tried it, and loved it. Can you believe he questioned me??!!

I garnished my soup with chopped fresh cilantro. I always keep cilantro in a water glass in the fridge. This will keep the cilantro fresh. I also sliced up an avocado, squirted in sour cream, added some shredded pepper jack cheese and topped it with flour tortilla chips.

Putting your cilantro in water will keep it fresh for a long time!!

Have you tried squeezable sour cream, yet? Amazing.
