Beef and Cheese on Ciabatta Rolls with Sweet Potato Fries

We had to take a little road trip on Monday, so I needed an easy dinner to come home to. Alice, the housekeeper and cook still hasn’t been hired..so, the crockpot and I have a pretty decent relationship when I don’t have time to cook. I needed an easy meal. One of my go-to easy meals is a roast. There is a lot you can do with a roast, and it really cooks it’s self.

So, I put a 3-4 pound roast in our crockpot and seasoned it with season salt and pepper. I also added a little water and put it on low so it could cook all day. This could also be done in your instant pot..just don’t ask me how. 😉

When we got home, I shredded the meat on a cutting board.

To keep the meat warm, I put it back into the crockpot.

I Preheated the oven to 450 F, took two sweet potatoes, then washed and dried them. I cut the potatoes length wise into 1-inch wide wedges. Then I placed them on a sheet pan, drizzled them with olive oil and seasoned the potatoes with salt and pepper. (Toss to coat). It’s best to place them skin side down, but honestly I’m not sure I always do, and they turn out fine!! Don’t fret the small stuff in life!

I roasted them in the oven for 25-27 minuets.

I buy frozen Ciabatta rolls, they are delicious and work perfectly for a girl who lives 15 minuets from the nearest grocery store. I heated a couple of these in the oven after I made the sweet potato fries.

Cheese is next, which flavor do you prefer?

The rolls and beef will both be hot, so the cheese melts instantly.

Boom, done!
