Potato, Egg, Sausage Scramble

Today was a snow day in our house. So, we all sort of slept-in. I usually make breakfast, but I don’t always plan ahead. However, last night I really had my “stuff ” together. I had a pound of thawed sausage in the fridge last night and I thought, cook it up while you are making dinner and use it tomorrow.

So, I did. I also had some baked potatoes cooking and my sons decided at dinner they didn’t want them.

So, this morning I had two cooked potatoes and cooked sausage..the perfect breakfast was brewing!!

First I took six eggs, about a 1/4 cup of sour cream and 1-2 tablespoons of milk and whisked them.

Then I took half the cooked sausage, (but you could cook it at this point) and two pieces of cooked bacon (you could also cook this now or omit it) and a tablespoon of butter and warmed it in the pan.

Next I added one of the diced cooked potatoes, and warmed it. I didn’t peel it, but you could.

Now add your egg mixture. If you are a ding dong like me and didn’t use a non stick pan, add another tablespoon of butter at this point. Cook the eggs.

Now add about a half of cup of cubed cheddar, or you could used shredded.

Done. Hearty and delicious!!

I ate this after my workout. I wasn’t even hungry at lunch. So yummy.

Recipe:

Half a pound of sausage

2 pieces of bacon

2 tablespoons of butter

1 cooked baked potato

6 eggs

1/4 sour cream

1-2 tablespoons of milk

1/2 cubed cheddar

(Add onions, green onions and peppers if your family is adventurous…mine is plain Jane.)
