Not Your Average Baked Potato

You walk in the door and you have about 30 minutes to prepare food. We’ve all been there, right? I’m really hoping I’m not the only one…

To top it off, you have nothing even planned. Prior to this exact moment, I was scanning my fridge, freezer and cupboards in my mind. There has to be SOMETHING in there to make. Then it hit me like a door: Meat and Potatoes—the key to my husband’s heart. My husband is not a heavy complement giver. I’m usually looking at him with anticipation when we are trying something new and I ask, “Well, what do you think?” His reply, “It’s pretty good.”

Pretty good??  Ugh…I thought it was fantastic! Anywho, after I made these potatoes he told me TWICE, (I wrote it down in my diary so I could remember) that he LOVED lunch.

So, my girl Ree makes a very similar potato, and she is who I got the idea from, but I didn’t have 60 minutes to bake them. So, I tried something and it worked!

Preheat your oven to 450 F.

Take your desired amount of potatoes scrub them and poke them a few times with a knife. Place them on a plate and put them in your science oven (or microwave for all you non-movie nuts). I just hit the baked potato button and it sensed how long to cook them.

While this is happening, mix a stick of melted butter, 1/2 cup of olive oil, 1 tablespoon of dried chives, 1-2 garlic cloves minced, 1 teaspoon of kosher salt and 1/2 teaspoon of pepper in a bowl.

When the microwave is done cooking the potatoes, slice them, but not all the way through. Use the spoons to avoid cutting all the way through. They don’t have to be super thin, because they are already cooked.

Generously spread that butter mixture all over the tops and inside each cut of potato. I sprinkled on Parmesan cheese, too.

Bake them in the oven for 10-15 minutes. This is just to crisp them up.

I served mine with pork chops and cooked frozen peas. Again, my husband was delighted.

1 Stick of Real Butter

1/2 Cup Olive Oil

1 Tablespoon dried Chives

1-2 garlic cloves minced

1 Teaspoon Kosher Salt

1/2 Teaspoon of Black Pepper

4 Russet Potaotes
